Chicken Nuggets . . . HOWEZAT!

Ingredients

  • 200 grams Parmesan cheese, cubed
  • 250 grams Bread or Panko Crumbs
  • 500 grams chicken breast, cubed
  • 1 teaspoon chicken stock paste, optional
  • 4 eggs
  • Olive Oil and Butter for frying

Recipe's preparation

    • Place cubed Cheese into TM bowl and grate for 5 seconds on Speed 6.  Add Bread, chop for a further 5 seconds on Speed 6.  If using Panko Crumbs, just pour the Panko Crumbs and Grated Cheese into a deep dish for later use.
    • Add chicken to bowl and mince for 8 seconds on Speed 7.  
  1. Add Stock Paste and 1 x Egg.  Mix for 8 seconds on speed 6.

  2. Wisk remaining eggs in a deep dish.

  3. Roll teaspoons of chicken mixture into balls, roll in egg, flatten and coat with crumb mixture.  Coat again in egg, then crumb mixture.  Set aside.

    Tip:  I prefer to use food preperation gloves for this step.

  4. Heat even amounts of Olive Oil and Butter in a medium heat frypan.  Cook batches of chicken nuggets until golden ol each side.  

    Tip: If frypan heat is too high, nuggets will brown without cooking right through.

    I made these in such haste that I left the cheese and bread crumbs in the bowl then added the chicken and other ingredients rolled them up and pan fried them like that. The kids loved them so thank you.

    Very tasty and super quick to make. I cooked them in the oven 180 for 20mins, with a spray of oil before putting them in. Then i flipped them over half way. Nice and crunchy.

    I got my toddler involved in making my batch.  I put some rice puffs in a plastic bag - let the air out and handed my daughter a mini rolling pin and let her bash away for a while.  The texture was great and she loved helping.  Thanks for the recipe.

    One other thing. Any leftover bread or rolls I have after making them of course, I turn into crumbs and freeze when a recipe calls for bread crumbs. I used my frozen bread

    crumbs for the bread component of this recipe which helps the cost

    yo who is very fussy and pretty much only eats nuggets loves these as do I. I substitited chicken stock

    for the EDC concentrate. Anither tricky way to get veggie into my child. Fried them and they turned out awesome. Watered down the dipping egg slightly with some milk. Super recipe

    Good receipe. I used 750g chicken for the amount of breadcrumbs/cheese and also needed about 4 eggs for dipping before crumbing! Tasted great with the Parmesan. I cooked a batch in the oven and sprayed them with cooking spray, and also shallow fryed a batch, both ways tasted good.

    Made these tonight.  They were super.  I had some continental parsley in the fridge so chucked this into the meat mixture as well along with Thermie vege stock.  Also sparyed with coconut oil before baking in the oven.  Will be making again!! Thanks!

    Hi, Yes you can certainly make them and freeze them.  I do this all the time, so I have supplies in the freezer.  I put them in an air tight container with baking paper in between each layer.  I then heat them in the oven for about 20 minutes at 180 degrees.

    Note, I needed more egg for coating and I'll experiment with different cheeses and amount next time, however I will always use Panko for crumbs.

    I've put surplus in freezer ready to cook when needed. Thanks for tip to not heat too hot, mine looked just like the picture.

    oh my goodness....YUMMY!!! My kids absolutely loved them. I baked mine in the oven with a bit of cooking spray and they still went lovely and crispy golden brown. I have 2 very fussy eaters, one that doesnt normally like chicken and in her words "I didnt like them mummy...I LOVED them"
