Laksa Noodle Stir Fry

  • 75g Laksa paste (bought or homemade), I use homemade skinnymixers laksa paste
  • 20g oyster sauce
  • 10g soy sauce, Or coconut aminos or tamari
  • 10g Coconut sugar, Or any sugar you like
  • 300g water
  • 1 teaspoon salt
  • 200g Prawns OR sliced chicken
  • 500g hokkein noodles
  • 2 eggs

Garnishes to serve

  • Fried shallots
  • spring onion
  • fresh coriander
  • chilli

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add laksa paste, oyster sauce, soy sauce, sugar, water and salt to TM bowl and cook for 5 minutes, 100 degrees, spoon speed (slowest speed), MC ON.



    Add prawns or chicken and cook for 1 minute, varoma, reverse, spoon speed, MC ON.


    Add noodles to TM bowl. Use a spatula and give them a good stir to coat in the sauce as much as you can. Cook for 4 minutes, varoma, reverse, spoon speed, MC ON.






    Meanwhile, crack the eggs into a thermoserver and beat lightly with a fork. When the noodles have finished cooking, check to see the meat is cooked then pour the hot noodles into the thermoserver and stir the eggs through quickly. Let it sit for about 5 minutes with the lid on before serving. Garnish with fried shallots, spring onion, fresh coriander, chilli.

Tip

DOUBLING THE RECIPE: I've successfully doubled this recipe using 1kg noodles and 100g laksa paste. The rest of the ingredients remain the same.  Increase cooking time from 4 minutes to 6 minutes.

    Amazing.
    Used Skinnymixers paste and added a little bit of coconut cream.
    Doubled the prawns by sautee a batch in the tm6.

    So good! I used coconut cream in place of the water and rice noodle instead of the hokkien and it was so good! I used the Valcom brand paste.

    This was a lovely quick meal (I already had the laksa paste in the freezer). I used left over roast chicken and some frozen tofu and some snow peas. My younger kids needed a bit of coconut cream added to make it less spicy for them, but I loved it as is.  Thank you, it's great to have another simple dinner to make!

    Made this yesterday Tanya and my Malaysian MIL and husband liked it. Thanks for the recipe.I used 10 dried chilies in the laksa paste and my 2 y/o ate it fine, wasn't that spicy at all. Also added some sliced fish cakes, chopped Asian veggies, bean sprouts and fried tofu. Thumbs up.
