Nushi's Banana and Blueberry Pikelets

  • 3 very ripe bananas, peeled
  • 1 1/2 cups SR flour
  • 2 eggs
  • 1/2 cup milk
  • 2 Tbs coconut sugar
  • pinch Himalayan salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    How to make the magic happen..........
  1. Place bananas into the TM bowl.  Blitz for 15 sec/Sp 7/MC on.

     

  2. Scrape down sides and add remaining ingredients (except blueberries) to the TM bowl.  Blend for 10 sec/Sp 5/MC on.  Scrape down sides and blend a further 10 sec/Sp 5/MC on.

     

  3. Cook dollops of batter in a hot frypan sprayed with a little oil.   Sprinkle blueberries on top.  Flip over to cook on the other side when bubbles appear.

     

  4. Alternatively you can bake the batter in an oven at 180C in cookie moulds for 20 mins.  Sprinkle with blueberries on top.

     

  5. Serve with some rhubarb puree.
