Peanut Free Satay Sauce (contains Cashews)

  • 100 g Cashews, Roasted and Salted
  • 2 centimetres ginger
  • 2 cloves garlic
  • 1 --- red chilli
  • 1/2 --- red onion

  • 1 teaspoon curry powder
  • 20 g olive oil
  • 270 g tin of coconut cream
  • 50 g Kecap Manis (sweet soy)
  • 10 g soy sauce
  • 20 g brown sugar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Blitz Cashews (or Sunflower Seeds if doing nut free version) speed 6 8sec and set aside. 

    place ginger, Chilli, Garlic, Onion and Curry Powder to bowl and chop speed 5 for 5 sec, scrape down sides and repeat.

    Add Olive Oil and cook 3min, 100 degrees, Speed 1 with MC off. 

     

    Add all all other ingredients (including nuts/seeds) except Lime Juice. 

    Cook 2min, 80 degrees, Speed 1. 

    Add Lime Juice and mix Speed 4, 5 sec. 

     

    We use this as a stir fry sauce.
