Steamed open bao buns

  • 525 g bakers flour
  • 200 g warm water
  • 50 g Milk
  • 1 tsp dry yeast
  • 1 tsp rice wine vinegar
  • 1 tbsp sugar
  • 20 g oil, plus extra for brushing
  • 1 tsp baking powder

Recipe's preparation

  1. Add ingrediants for dough in order listed
  2. Knead for 3 minutes
  3. Turn dough out onto thermomat and rest until doubled in size
  4. Knock dough down and roll into a log shape, cut into 18 portions
  5. Roll each portion into a oval shape, brush top side with extra oil and fold in half. Place onto a square of baking paper.
  6. While dough is rising to double it's size again add 1 litre of water to jug and heat for 6 minutes/varoma/sp 1
  7. Add half the buns to varoma and cook for 11 mins/varoma/sp 3
  8. Repeat with the remaining buns

These are fantasic filled with sticky roast pork or asian fried chicken and coleslaw.
