Corn Fritters

Ingredients

Batter

  • 150 grams plain flour, (or Gluten Free Flour)
  • 0.5 level tsp sea salt
  • 1.5 level teaspoons baking powder
  • 1 level tablespoon rapadura or coconut sugar
  • 0.5 level teaspoon paprika
  • 125 grams Milk, (or alternative milk)

Filling

  • 400 grams corn kernals, Fresh or Frozen
  • 200 grams red capsicum
  • 6 stalks spring onion, Light green parts only
  • 4 sprigs fresh parsley
  • 4 sprigs fresh coriander
  • 1 level teaspoon Minced chilli, Or 1 long red chilli with seeds removed

  • 12 Small slices of ham or cooked bacon
  • 1 large avocado
  • 4 heaped tablespoons tomato relish, See link to relish recipe in Preparation Steps

Recipe's preparation

    Cooking the Fritters
  1. Chop fresh herbs and spring onion (and fresh chilli if using) for 5 seconds on Speed 5. Add capsicum and chop for 3 seconds on Speed 5. Add all remaining ingredients and mix on ReverseCounter-clockwise operation for 30 seconds on Speed 5. Heat a large frypan on medium-low heat. Spray with oil. Shape fritter mixture into rounds in pan. Around 2 tablespoons of mixture per fritter is a good size. 

    Cook for around 2 minutes on each side. Fritters should be golden brown. Keep each batch warm in your Thermoserver while you cook the entire mixture.

     

    ADD-ONS!You can add whatever delicious morsels you would like to accompany these frittery joys. I like to add poached eggs, ham or bacon, avocado and a good dollop of tomato relish. Tip

You can prepare the mixture ahead of time (such as the night before). To do this:

Chop herbs and capsicum as directed in the recipe steps above and store in an airtight container.

Mix batter ingredients for 30 seconds on Speed 5. Store in a seperate airtight container.

Combine all ingredients together just prior to cooking.
