Mexican corn chip casserole filling

  • 1 red pepper

  • 1 portions large avocado
  • 3 level tablespoons fresh coriander
  • .5 Juice of lemom

Sauce

  • 25 grams Butter
  • 45 grams plain flour
  • 300 grams Milk
  • 120 grams Tasty cheese
  • .5 level teaspoons cumin seed, ground
  • .5 level tsp oregano, dried, Mexican
  • 150 grams Corn chips
  • 60 grams grated cheese
  • 60 grams grated cheese, For topping

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Filling
  1. Add onion half and garlic Closed lid chop spd 7 3 secs.
    Add olive 3 mins 100C spd 1
    Add red pepper and chop 3 secs spd 6
    saute a further 3 mins 100C spd 1.
    All remainder of filling ingredients and stir Gentle stir settingCounter-clockwise operation 6 secs.
  2. Sauce
  3. Grate cheese spd 6 for 6 secs and out aside
    add to Closed lid butter, flour, milk, spices and cook 7 minutes 100C spd 4.
    add cheese and Gentle stir setting for 4 secs.
  4. Assembly
  5. Arrange half of corn chips and cover with filling and half the chopped avocado

    pour cheese sauce over filling.
    layer more corn chips, filling and finish with extra cheese.
    Bake 220C 10 to 15 minutes.

Tip

If making in advance, put filling and sauce aside and heat up just before assembly. Mixture needs to be hot as the corn chips will burn if cooked more than 10 to 15 minutes.
