Red Cabbage, Pear and Coriander Salad

Ingredients

Red Cabbage, Pear and Coriander Salad

  • 350 g red cabbage, cut into pieces
  • 100 g very firm pear, cored and cut into quarters
  • 1 bunch of coriander
  • 1 tbsp of lemon juice
  • 1 tbsp olive oil
  • 1 Pinch of salt and pepper
  • 1 sprig of coriander to garnish

Recipe's preparation

  1. PLACE ALL INGREDIENTS IN YOUR THERMOMIX

    Peel off outside leaves of red cabbage and discard, weigh and coarsely chop by hand.

    Wash, quarter and core pear, leave skin on and cut in halves again.

    Wash and dry coriander, break off roots and discard, chop stems, coarsely chop leaves.

    Add lemon juice, oil, S & P.

     

    BLEND for 4 seconds, speed 4.

    Scrape down the sides.

    BLEND for a further 4 seconds, speed 4 - to your liking.

    SERVE

    Enjoyed this salad. Was a crowd favourite at a recent family bbq. The only addition I made was adding a dash of balsamic and raspberry vingear. Without it, i found it a little tart.

    Another great salad made easy with a Thermomix. I too added a dash of sweet chilli sauce which I think did improve the flavour.  It was a great side dish to serve with my spicy pork rashes. Thanks for posting !

    congratualtion to the recipe of the day, very delicious and easy, after making a red cabbage soup with TM having a rest so it would be the right recipe to use the rest for this salad and i will make it some more times perhaps lil bit modified

    Great salad was delicious with our bbq lamb steaks and the leftovers were even better the next day on a bed of Rocket and Spinach topped with Mango, Chilli tuna! Divine. Thank you! Big Smile
