Zucchini Flower Fritters

  • 20 g pecans or pine nuts
  • 1/2 red onion
  • 170 g sweet potato (steamed and pureed or mashed)
  • 40 g grated cheese
  • 35 g feta cheese
  • 2 sprig fresh rosemary
  • 10 g garlic infused olive oil
  • salt and pepper to taste
  • 12 zucchini flowers (remove stamen and stem)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Set oven on 180C and prepare a tray and line with baking paper or baking thermomat.

    2. Place nuts into bowl and chop on spd 5 for 4 secs.

    3. Roast on 100C, 3 mins on spd .5 and then set aside once done.

    4. Place onion and rosemary into bowl and chop on spd 7 for 3 secs. Add oil and saute on 100C, 3 min on spd 1.

    5. Add sweet potato, nuts, salt and pepper, grated cheese and feta cheese. Mix for 20 secs on spd 3. Repeat if necessary.

    6. Fill each flower with around 1 Tablespoon of the mixture and place on prepared tray.  Drizzle with a little oil and bake for 30 mins or until the flowers are golden brown.

    7. Serve.

Tip

*The flowers may be hard, therefore you can microwave of steam them slightly to soften.
