Chicken, pumpkin, basil pesto risotto

  • 200 g butternut pumpkin, Peeled, diced 3cm cubes
  • 1 --- onion, Halved
  • 2 clove garlic, Peeled
  • 50 g Butter
  • 50 g white wine
  • 2 level tbsp Vegetable stock paste
  • 800 grams water
  • 500 g chicken breast, Diced
  • 50 g Fresh Baby Spinach
  • 350 g arborio rice
  • 100 g Parmesan cheese
  • 2 level tbsp Basil Pesto
  • to taste salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place Parmesan cheese in Closed lid
    Grate 10sec/Sp9
    Reserve to side.

    Place pumpkin and 70g of mixed stock in Closed lid
    8 mins/sp1/Counter-clockwise operation/100deg
    Place in thermoserver to keep warm.

    Add water to bowl and turbo to clean. Discard water and dry Closed lid.

    Place garlic and onion in Closed lid
    Chop 5sec/sp5
    Scrape sides of Closed lid
    Add butter
    Sauté 2mins/100deg/Sp1
    Add rice and wine to Closed lid
    Saute 2mins/100deg/Counter-clockwise operation/Gentle stir setting
    Add remaining water, stock, chicken, pesto, salt and pepper to Closed lid
    Cook 14mins/100deg/Counter-clockwise operation/Sp1.5/simmering basket on lid
    Add reserved Parmesan and spinach to Closed lid
    Cook 2mins/100deg/Counter-clockwise operation/sp1.5

    Place in thermoserver with served pumpkin and stir through with spatula.

    Let stand for 10 mins and serve.

Tip

If you don’t have a Thermo server leave in your TM bowl with lid on for 10 mins.
