Risotto

  • 3 cloves garlic
  • 1 stalk shallots
  • 1 --- onion
  • 40 grams olive oil
  • 500 grams diced chicken breast
  • 2 --- whole zucchinis, washed thoroughly & ends removed
  • 350 grams Arborio rice.
  • 2 tablespoons chicken stock
  • 900 grams water
  • 100 grams pumpkin, cut into tiny cubes (about 1cm)
  • 100 grams sweet potato, cut into tiny cubes (about 1cm)
  • 50 grams thickened cream
  • 100 grams parmesan cheese grated

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    CHICKEN, PUMPKIN, SWEET POTATO & ZUCCHINI RISOTTO
    1. Place garlic, onion & shallots in Thermomix bowl and chop for 3 seconds on Speed 5.
    2. Scrape down the sides of the bowl.
    3. Place chopped zucchini's into bowl and chop for a further 5 seconds on speed 5
    4. Scrape down the sides of the bowl.
    5. Add olive oil, diced chicken breast and saute for 4 minutes, 100 degrees, Reverse Speed Stir.
    6. Add arborio rice, chicken stock and water to the bowl.
    7. Place the pumpkin & sweet potato into the Varoma and place on top of the TM.
    8. Cook for 16 minutes, 100 degrees, Speed 2 (although maybe you could do it set to Varoma & speed 1)
    9. Add cream and mix for a further 2 minutes 100 degrees reverse speed stir. (if it doesnt blend enough just give it a good mix once you have put it into the Thermoserver.
    10. Place the risotto into the Thermoserver, add the cooked pumpkin, sweet potato & parmesan cheese.
    11. Stir to combine.
    12. Cover for 5-10 minutes to allow the risotto to thicken.
    13. Serve with the remaining parmesan cheese on top.

Tip

If you prefer a smoother consistency, take the risotto out of the bowl, add the pumpkin and sweet potato & then re-add the risotto, this should mash the two on the bottom but only very slightly. Also, if you prefer to use the butterfly whisk, put it in step 4 just prior to step 5

    I found this a bit flavourless in all honesty. It needs something else, herbs & spices, maybe dill or parsley. Not sure. I will definitely make again as I liked it & it wad super easy but will add some herbs & spices next time. Oh and TIP make sure you grate the parmesan first!

    Made this a couple of nights ago. It made quite a bit, so fed our family of five easily and there's heaps left! The flavour is great, even better the next time you eat it. Will definitely be one I make again!
