Classic Carbonara

Pasta Sauce

  • 100 g parmesan cubed
  • 1 onion brown, halved
  • 5 Garlic cloves peeled
  • 125 g Bacon - diced
  • 40 g Butter
  • 1 tsp Veg Stock Paste
  • 200 g thickened cream
  • pinch salt & pepper
  • 250 g fettucine Pasta

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add parmesan cubes to the TM bowl, chop 10 sec / sp 10. Set aside.

     

    Add onion & garlic to the TM bowl, chop 3 sec / sp 7. Scrape down the sides of the bowl.

    Add diced bacon, butter, salt & pepper & cook 3 min / 120 / sp 1 WITHOUT MC.

    Add veg stock paste & thickened cream and cook 5 min / 120 / sp 1 WITHOUT MC.

    Add carbonara sauce to cooked fettuncine pasta & top with grated parmesan to serve.

Tip

Once you have cooked your pasta make sure you rinse under warm water so that doesn't go all sticky.

    I used leftover Christmas ham instead of the bacon, and cooked for 2 mins longer. It was quick, easy and delicious. Would definitely recommend and will do it again.

    Very easy and yummy. I pan fried some diced chicken breast and tossed it all together in the pan once cooked.
    I used 4 cloves of garlic and it was more than enough, certainly wouldn't use 5!

    So quick and easy. I did add some cornflour and cook an extra couple of minutes but only because I wanted a thicker sauce. It certainly didn't need it though - kids like a gluggy sauce that's all.
