Clone of Spanish Chicken Risotto

Ingredients

3 slice(s)

  • 1 brown onion
  • 2 cloves garlic
  • 130 g ham
  • 1 red capsicum diced
  • 1/4 tsp tumeric
  • 1/2 tsp cumin ground
  • 1/2 tsp smoked paprika
  • pinch cinnamon
  • 100 g white wine
  • 100 g water
  • 400 g Tin Tomatoes Diced
  • 1 tablespoon TMX stock concentrate
  • 200 g arborio rice
  • 20 g oil
  • 300 g chicken breast (diced)
  • 1/2 zucchini cubed

Recipe's preparation

  1. Add onion, garlic and chilli (if using) to bowl and chop for 3 seconds on speed 7.  Scrape down the sides add 20g oil and saute for 2 minutes @ 100 deg speed 1.

  2. Add ham, spices and capsicum and cook for 5 minutes at 100 deg on speed 1 counter-clockwise operation

  3. Add rice and wine.  Cook for  2 minutes at 100deg speed 1 counter-clockwise operation


  4. Add tomatoes, stock and water.  Cook for 10 minutes at 100 deg on speed 1 counter-clockwise operation.  

  5. Add chicken and zucchini.  Cook for 5 minutes at 100 deg on speed 1 counter-clockwise operation.  

  6. Leave to rest for 5 mins before serving.
