Creamy Garlic Prawn Risotto
- 60 grams Parmesan cheese
- 8 cloves garlic
- 6 sprigs fresh parsley
- 40 grams extra virgin olive oil
- 375 grams arborio rice
- 100 grams dry white wine
- 500 grams peeled, medium raw prawn
- 2 level tablespoons Vege Stock Concentrate
- 950 grams water
- 100 grams pure cream
- 10 grams fresh lemon juice
- salt and pepper to taste
- 2 stalk spring onions for garnish

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation
- Add Parmesan and grate 5 secs/Speed 8
- Set Aside
- Add Garlic and Parsley to TM Bowl and chop 5 seconds/Speed 6
- Scrape down the sides of the bowl
- Repeat chopping of garlic and parlsey 5 seconds/Speed 6
- Add Oil and saute 3 minutes/100C/Speed 1
- Insert butterfly.
- Add rice and wine and saute for 2 minutes/100C/Reverse Speed 1
- Add stock and water. Leave MC off. Cook for 14 minutes/100C/Reverse Speed 1
- Add prawns, cream, lemon juice and cook for 1 min 30 sec/100C/Reverse Speed 1
- Place in thermoserver and let stand for approx 10 minutes
- Season with salt and pepper and serve with parmesan and shallots.

Tip
Prawns will finish cooking in thermoserver whilst Risotto is resting in thermoserver for last 10 minutes.
