Hidden Veg Bolognese sauce
- 1 zucchini
- 1 carrot
- 3 cloves garlic
- 1 brown onion
- 40 g olive oil
- 500 g lean beef mince
- 1 fresh Bay Leaf
- 1 level tbsp Vegetable stock paste
- 1/4 teaspoons black pepper, freshly ground, to taste
- 50 g red wine
- 1/2 yellow capsicum
- 1/2 red capsicum
- 100 g tomato paste
- 400 g canned chopped tomatoes
- 200 g mixed olives

Recipe's preparation
- 1. cut zucinni, capicum, garlic, carrot and brown onion into pieces (see pic) and place into mixing bowl and chop 3 sec/speed 7.
2. Scrape down sides of mixing bowl with spatula. repeat if required
3. Add oil and cook 5 min/100°C/ reverse/speed 2.
4. Add beef mince, bay leaf, stock paste, pepper. Stir with spatula to break up and loosen mince and cook 5 min/100°C/reverse/speed 1, placing simmering basket instead of measuring cup onto mixing bowl lid.
5. Add red wine, tomato paste and canned tomatoes, olives and cook 20-25 min/100°C//speed .5 .
6. Carefully remove and discard bay leaf.

Tip
While your pasta sauce is cooking add 400g of pasta to boiling water to a thermoserver and allow to sit and cook.
