Hidden Veg Bolognese sauce

  • 1 zucchini
  • 1 carrot
  • 3 cloves garlic
  • 1 brown onion
  • 40 g olive oil
  • 500 g lean beef mince
  • 1 fresh Bay Leaf
  • 1 level tbsp Vegetable stock paste
  • 1/4 teaspoons black pepper, freshly ground, to taste

  • 1/2 yellow capsicum
  • 1/2 red capsicum
  • 100 g tomato paste
  • 400 g canned chopped tomatoes
  • 200 g mixed olives

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipe's preparation

  1. 1. cut zucinni, capicum, garlic, carrot and brown onion into pieces (see pic) and place into mixing bowl and chop 3 sec/speed 7.

    2. Scrape down sides of mixing bowl with spatula. repeat if required

    3. Add oil and cook 5 min/100°C/ reverse/speed 2.

    4. Add beef mince, bay leaf, stock paste, pepper. Stir with spatula to break up and loosen mince and cook 5 min/100°C/reverse/speed 1, placing simmering basket instead of measuring cup onto mixing bowl lid.

    5. Add red wine, tomato paste and canned tomatoes, olives and cook 20-25 min/100°C//speed .5 .

    6. Carefully remove and discard bay leaf.

Tip

While your pasta sauce is cooking add 400g of pasta to boiling water to a thermoserver and allow to sit and cook.

Omit the red wine if you choose
