Hidden veggie, one pot pasta bolognese

Ingredients

6 portion(s)

  • 40 g Parmesan cheese, cubed
  • 1 brown onion, halved
  • 1 carrot, roughly chopped
  • 1 zucchini, roughly chopped
  • 60 g olive oil
  • 1 can Diced tomatos
  • 2 tablespoon tomato paste
  • 1 tablespoon Veg Stock Paste
  • 30 g sugar raw
  • 100 g water
  • 250 g pasta spirals

Recipe's preparation

  1. 1. Place cheese into mixing bowl. Chop 10 seconds/speed 9. Set aside. Clean and dry bowl.

    2. Place onion in to mixing bowl. Chop 3 seconds/speed 7. 

    3. Add carrot and zucchini. Chop 5 seconds/speed 7. Scrape down sides

    4. Add oil. Cook 5 minutes/varoma/speed 2.

    5. Add mince. Cook 5 minutes/100 degrees/Counter-clockwise operation/Gentle stir setting.

    6. Add can of tomatoes, tomato paste, stock, sugar and water. Cook 10 minutes/100 degrees/Counter-clockwise operationGentle stir setting

    7. Add pasta and use spatula to submerge. Cook 8-10 minutes/100 degrees/ Counter-clockwise operation/Gentle stir setting

    8. Place into bowls and sprinkle with parmesan cheese.

Tip

You could interchange the carrot or zucchini with capsicum.

This is a great way to get veggies into your child. Completely hidden!

    We also loved this dish! Quick, easy and delicious! We also added garlic. Maybe a little too sweet for us so will probably add less sugar next time!

    Really like this recipe. Love the fact that it all goes in the bowl! Always add garlic.. Usually a few cloves but then we like garlic. Also don't use the cheese due to allergies in the family. I do find that the pasta gets stuck around the blade though and it really only feeds four in my opinion.

    I added 1 clove garlic & mushrooms (mixed in bowl along with onion) and it  made for nice flavor. also used pork mince (little confusing that it doesn't have mince in the recipe ingredients so wasn't too sure how much was required, i probably had around 300gs. Was great vegie meal which still tasted amazing and the boys loved it,

    The quantity of mince is missing out of the ingredients. I was thinking it was a bit of a vegetarian dish and luckily upon reading the method (while making dinner) I was lucky enough to have 500g mince in the freezer that I was going to use for sausage rolls.

    All in all yummy and the kids loved it. I was thinking the same with the garlic tmrc_emoticons.)

    Thanks for your feedback Spaldingk! I think the pasta depends on what brand it is. I've cooked it with a different pasta and it felt a bit too long. 

    What herbs did you add?

    I added some herbs and garlic and it was a nice easy meal. I needed to cook the pasta for a bit longer than stated.
