- 1 fillet chicken breast
- to taste Favourite Mexican Seasoning
- 1/2 small red onion, halved
- 1-2 jalapeños, deseeded and roughly chopped
- 1 bunch coriander
- 3 tomatoes, quartered
- 2 cloves garlic
- 1/2 lime
- 1 Cup Cooked Brown Rice

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Slice chicken breast into a few pieces and coat with the Mexican Spice of choice. Set aside.
Add coriander to bowl and chop on speed 6/1 sec
Set aside
Add garlic, jalapenos and onion to bowl. Chop on speed 7/2 secs
Set aside
Add tomatoes and chop on speed 5/2 secs
In a sperate bowl, combine tomato, onion, jalapeno, garlic and HALF of the coriander.
Set aside.
Cook chicken using preferred method. (I grilled mine)
Place rice on a plate, mix through the rest of the reserved coriander.
Add tomato/onion mix and squeeze over the juice of the lime
Finally, top with chicken.
