Naked Risotto

Ingredients

Naked Risotto

  • 1 --- onion, large
  • 60 grams Butter
  • 300 grams rice, arborio
  • 100 grams white wine
  • 1 tablespoon TM vegetable stock concentrate
  • 900 grams water
  • 100 grams parmesan cheese grated

Recipe's preparation

    Naked Risotto
  1. Place peeled and quartered onion into thermomix bowl chop for 3 seconds on speed 7

  2. Add 40 g of butter and saute for 2 minutes at 100 deg on speed 1

  3. Add rice and wine and saute for 2 mins 100 deg on speed 1

  4. Add stock and water and cook for 16 minutes 100 deg on speed 1

  5. Pour into thermoserver and stir through rest of butter and half the cheese

  6. Serve with parmesan cheese sprinkled on top and pepper.

    step 4 i added the following

    1/2 frozen peas
    1 TBS garlic granules
    salt & pepper
    hand full of parsley & hand full of fresh basil
    1/2 thick cream

    half way theough step 4 added some parmi cheese. Hearty,cream, comforting Risotto.

    I didnt use any water as per recipie, only used veggie stock & wine.

    This was perfect. I used it as a base, layering on top roasted onion and beetroot, and slow cooked balsamic beef. It was a killer meal loved by all!!!! The risotto was perfectly cheesy 😋

    Beautiful!! I halved the recipe & added half a chorizo sausage with the onion, was just gorgeous. Next time I'll try bacon so the kids can eat it, too - too much kick for their tastebuds with the chorizo so poor hubby & I had to eat it all lol Such a shame!! tmrc_emoticons.;)

    Will be playing with this a lot in the future, thank you for such a lovely recipe.

    Same - my other half hates risotto and LOVED this.  I added some frozen veggies and bacon, it was delicious.  Even kids came back for seconds which never happens in this house.  Lucky I had left overs, got 2 easy nights of dinner for the kids.

    Your recipe was delicious and was so easy. I added a bit of bacon with the onion. The end result was a perfect consistency. ...and the kids loved it.  tmrc_emoticons.)
