bolognese sauce with a twist

  • 500 grams grass fed Beef mince, (substitute for other or a combination if you prefer)
  • 1 --- brown onion
  • 1 clove garlic
  • 1 heaped tablespoon parsley, Leaves only
  • 1 heaped tablespoon Tyme, Leaves only
  • 1 level tsp salt
  • 1 level tsp pepper
  • 1 tbsp rosemary, leaves only
  • 100 g bacon, Rashes, diced
  • 150 g mushrooms, Fresh or substitute for champinions
  • 1 Capsicum, Red
  • 250 grams Crushed tomatos, Italian herb is ok but can substitute for fresh if you like
  • 200 grams tomato past, store bought or home made is fine
  • 50 g olive oil
  • 70 g red wine, (Optional)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    The begining
  1.  Add onion, garlic, spices in mixing bowl (3 seconds/mc/speed 4) repeat if you would like it more fine to your taste) Scrape down sides

  2. add 30 grams oil and Saute.  3 mins/V/mc/R/speed1  (dont remove anything from bowl)

  3.  add in mince, left over oil, salt. pepper.  10 mins/100 degreese/mc/reverse/speed1

  4. Add tomatos, paste, mushrooms and bacon 15-20 mins/100degreese/mc/r/speed1(emulsify your wine here)

  5. Make the pasta dough or buy your pasta

Tip

Freeze left over sauce, This serves 8-10 portions. you can stretch this sauce by adding and extra 500 grams of beef mince and 1 extra tin of tomatos  No need for antyhing else, the Extra additions should feed roughly 16-18 people
