Risotto with Rosemary, Pumpkin, Peas & Mascarpone

  • 50 grams parmesan cheese cubed
  • 1/2 medium onion
  • 1 clove garlic
  • 50 grams olive oil
  • 350 grams Aborio Rice
  • 100 grams white wine
  • 3 tablespoons TM vegetable stock concentrate
  • 1100 water
  • 20 grams Butter
  • 1 1/2 teaspoons dried rosemary
  • 300 grams Pumpkin - cubed
  • 120 grams peas
  • 80 grams mascapone

Recipe's preparation

  1. Place the Parmesan Cheese into TM bowl and pulverise for 10 seconds on speed 9.  Set aside.
