Chicken & Turmeric Broth

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipe's preparation

    This recipe uses the Blade Cover
  1. Add 50 grams onion, 50 grams celery and 50 grams carrot or beetroot to the bowl
  2. Chop 2 seconds speed 5

  3. Add 10 black peppercorns, 1 level teaspoon of turmeric, 1 level teaspoon of ginger

    Place the Blade cover into position on top of the blades
  4. Place the chicken carcass into the bowl (chop into half depending on the size)
  5. Add 1500 grams of water to the bowl - or just until it covers the chicken and contents (just below the 2 litre mark level)
  6. Pop on the lid and the simmering basket on top. Cook for 90 minutes 100 / speed 1/Counter-clockwise operation
  7. Use simmering basket to strain the broth into a large jug or thermoserver

    Drink by the cupful and enjoy. Or add a cup of broth to a soup recipe for extra goodness. See tips for more information

Tip

Tip : roast a chicken and then after the meat has been carved keep the carcass for making the broth.

Use a free range or organic chicken (best nutrient value)

Turmeric can stain your thermomix lid. To clean yellow stains the tips are to clean with lemon juice or leave outside in the sunshine for at least 6 hours. Brushing the lid with oil will also halp to avoid staining.

Soup will last for 3 days. It is also freezer friendly.

If you have a cold or "flu-like" covid symptoms then chicken broth is a excellent therapeutic way to have regularly (especially if appetite is less). You can also add the broth to other recipes for extra goodness and replace for liquid in stews, soups or casseroles.

The amino acids help inflammation, and respiratory symptoms. The soup is good for the soul and is calming on the digestive system and the gut. This is a short cooking time which overall reduces histamine levels (which can be an issue for some individuals) If you are histamine intolerant then reduce the cooking time to 60 minutes
