Apricot and Persimmon Jam

Ingredients

  • 500 g Apricots
  • 500 g persimmons (non astringent)
  • 2 Lemons juiced
  • 1000 g sugar
  • 125 g water

Recipe's preparation

  1. Method

    • Peel and deseed persimmons, and add to Thermomix bowl with apricots which have had stones removed, chop by pressing turbo twice.
    • Add lemon juice sugar and water, cook 10 minutes 90C reverse speed 2.
    • Place rice basket over hole in the lid and cook 25 minutes, Varoma reverse speed2.
    • Test for setting point, a teaspoon of jam poured onto a cold saucer from the freezer will wrinkle when cooled if setting point has been reached.
    • Pour into sterilised jars and seal.

    Yum! I was given lots of persimmons by a family friend, and not everyone in my family like persimmons. But when I saw this recipe and decided to make it, even our most fussiest family members thoroughly enjoyed it on toast. I used canned apricots (fresh was not available) and put the same amount as per recipe. It turned out perfect and tastes sensational. Thank you for sharing this recipe.

  • I was given some persimmons

    I was given some persimmons from a family friend's farm.  I didn't have any fresh apricots but used about 1/3 quantity of dried apricots. I cooked them in the water first before adding the rest of the ingredients. Tastes great. A little astringent, but I don't mind that sensation. Thanks for the recipe

    Wow - what a flavour combination!  I think all Tasmanians love apricots but not many of us know too much about the persimmon.  I tasted my first persimmons this year as I have two Thermomix customers who love them and told me all about their health benefits for us.  Thank you, Alice.  I have already shared your recipe with my persimmon-loving customers, thanks to your generosity.  I appreciate the opportunity to learn from you through the forum here.
