Basil Pesto
- 50 g Parmesan cheese, cubed
- 2 cloves fresh garlic peeled
- 1 bunch basil leaves, fresh (stalks removed)
- 100 g cashew nut, roasted, unsalted
- 120 g olive oil, extra virgin

Recipe's preparation
1.Place parmesan and garlic into TM bowl"Closed lid" and grate for 10 – 15 seconds on speed 8
2.Add nuts & basil – process on speed 6 for 10 seconds till smooth – Bowl may need to be scraped down and step repeated
3.Turn to speed 4 and add the olive oil, slowly until combined well with other ingredients – 40 seconds
Variation is to add a handful of fresh rocket or baby spinach leaves along with the basil.
Great on hot pasta, as a dip, to garnish soup or mixed through a salad dressing
keeps well in the fridge for about a week and can be frozen.

I just made this tonight, but having never made pesto before (or eaten it!!) I'm not sure if it has turned out the way it should. I used half the oil as per comments below, but it was still pretty oil (a fair bit of oil poured out when I turned it on its side to pour into a dish). Also, it seems very stodgy. Is that how pesto is supposed to be? Any advcie is greatly appreciated

I used half cashews half pines nuts. Left out the parmasen for a dairy-free option therefore added some salt. I free poured in the oil until it was the consistancy I wanted, probably used less than 120g.

We've made more pesto since
We've made more pesto since we've had the Thermomix than we've ever made before as it's so easy to make and to vary the ingredients. We found this version a bit dry (so added more oil afterwards) and a bit bitter (not sure why) however we enjoyed it. Thank you for the recipe.

Good pesto recipe, i just added a touch of lemon juice and reduced the oil to 100gms but would reduce it further to maybe 90gms. The flavours developed better overnight. Next time i will swap out some cashews with pinenuts and i think the rocket would be nice also as mentioned in other posts.

Absolutely delicious I did t have enough cashews so added about 15g of pine nuts and took down the oil content to 95ml. A definate winner in our house!

This has become my "go to" pesto recipe...just the right balance of flavours and I like the fact that it uses cashews and not pine nuts . I also add a little salt and just a dash of white vinegar to give it an extra bite.. Thanks
Hi There - yep salt is an
Hi There - yep salt is an optional one, I personally find that the Parmesan gives off enough of a salty flavour but it is an individual taste. Glad you liked it. I think this recipe was made using the TM31 and using the TM5 you might find chopping the nuts on a speed lower might be a better way so they are not getting sprayed out to the sides. Hope that helps!!

Yum! I'm a brand newbie, just goy my TM, and this is the 4th thing I've made. Good proportions - only thing it needed was salt. Question - is it normal, when trying to process the nuts/basil, for the machine to keep needing to be scraped down and done again and again?

Yum yum!! I had plenty of basil in the garden so made many double batches in a row. I added a red chilli to the garlic as we like a bit of spice & used around 110g of basil leaves per double batch but reduced oil by more than half. I freeze in tiny plastic containers & also in ice cube trays, so take out fresh small batches at a time....Thank-you for this great recipe - my freezer is stocked up now

Brought this into work. Ran out of basil so popped in some spinach. They loved it want me to make it all the time. Grow sweet basil in my veggie patch. Used less oil like recommended by others! Beautiful nicer than supermarket!
