- 80 grams Parmesan cheese
- 100 grams raw cashews
- 1 garlic clove
- 80 grams Basil leaves
- 70 grams macadamia oil
- 10 grams white wine vinegar
- pinch of salt

Recipe's preparation
1. Place parmesan into mixing bowl and grate 10 sec/speed 9. scrape down side of bowl
2. Add all reamining ingredients and chop 10 sec/speed 7

A little disappointed. I think the flavour would have been better maybe if the cashews were roasted and or if the quantity was halved. It could also be that the macadamia oil changed the flavour to what I expected from other pesto I have made with olive oil, although I like using macadamia oil in other recipes.

I made this using fresh rocket instead of basil and it was fab.
