Four Leaf Pesto

  • 50 g Parmesan cheese
  • 2-3 cloves garlic
  • 25 g Spinach Leaves
  • 35 g kale leaves (stem removed)
  • 60 g Basil leaves
  • 10 g rocket leaves
  • 150 g cashews (I used activated cashews)
  • 60 g olive oil
  • 40 g macadamia oil
  • 1 pinch salt (I use a large pinch)

Recipe's preparation

  1. 1. Place the following ingredients in the Thermomix mixing bowl Closed lid and mix for 7 sec / speed 5.

     

    50 g parmesan cheese

    2-3 cloves garlic

     

    2. Place the remaining ingredients in the Thermomix mixing bowl Closed lid and mix for 10 sec / speed 6, or until desired consistency.

     

    25 g spinach leaves

    35 g kale leaves (stem removed)

    60 g basil leaves

    10 g rocket leaves

    150 g cashews (I used activated cashews)

    60 g olive oil

    40 g macadamia oil

    large pinch of salt (or more to taste)
