- 2 level tablespoons white wine vinegar
- 1 level tablespoon Dijon mustard
- 1/2 level teaspoon sea salt
- 1/2 level teaspoon caster sugar
- 120 grams olive oil, (1/2 cup)

Add all ingredients EXCEPT olive oil to bowl. Whisk for 20 seconds speed 4 till well combined MC on.
Mix Speed 4, 1 minute 30 seconds & very slowly pour olive oil onto mixing bowl lid with MC on & allow oil to drizzle into bowl to emulsify.
