  • 650 g mandarins, chopped in half, remove pips and separate segments
  • 600 g raw sugar
  • Juice of one lemon
  • thinly julienne half lemon peel with minimal pith
  • thinly julienne one Mandarin peel
  • splash of Grand Marnier

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. ·      Place all ingredient in bowl and cook 10mins/varoma/reverse/sp1

    ·      Place varoma base only in place of mc

           Cook 30mins/100/reverse/sp 2

    ·      Cook 15min/varoma/reverse/sp 2 until marmalade  thickens

     

    - test on cold saucer

    - store in sterile jars

    This is lovely and a great way to use organic mandarins from our tree. I made 2 batches today.

    I weighed 670g of peeled and deseeded mandarins and added only 330g sugar. Followed the rest of the recipe as is and it was really nice. I did add 200ml of water to my second batch in with other ingredients and cooked it for an extra 5 mins and the consistency was perfect...as the first batch set really firm.

    This is so tasty and I'll definitely make it again. I'm a lazy cook so I didn't peel my mandarins, just took out as many seeds as possible (there's still a few in there but I'm not worried). Used 400g of sugar and a splash of Cointreau. Might use less sugar next time. It was very thick so I added about 100g of boiling water to the mix at the end.

    I followed Jill Buckley's comments but used "Jam Sugar". Looks like I need to cut down the sugar even further as I have a very solid marmalade tmrc_emoticons.) Tastes nice and tart, just as I would expect a marmalade to taste.

    Very easy to make - used 500gm sugar and will make again but with 450. Just a tad sweet. Extended cooking time by 5 minutes.
    Made again with less sugar and yes just the right tartness. Will be making this again as we have a tree loaded with mandarins

    600g of mandarins with skin. Reduced raw sugar to 500g. Julienned three mandarins and whole lemon. Only 2jars that were delightful.
    Have also used the same approach for Orange Marmalade, with equal success. Julienned thinly peeled skin, and cut off most of the pith.

    I didn't have Grand Manier. Once I used Scotch and once I used some Vodka, but you wouldn't need anything I reckon.

    This was amazing. I peeled and sectioned and deseeded BEFORE weighing. The recipe didn't specify whether to weigh before peeling but I did.

    It was straightforward and set beautifully. I only used 300 gms of sugar instead of 600 gms. Would make it less next time too.

    Very handy as my tree was so full of mandarins.

    This marmalade was delicious and easy!!! Well worth giving it a go. I had to extend the last cook for a while as it didn't set,can't quite remember how long sorry....maybe an extra 10. Outcome was lovely though .

    I assume the mandarins should be peeled. It always useful to be super specific as some marmalade are made skin on! Look forward to trying this.
