Mango Mayonnaise / Mango faux cream

Mango Faux Cream

  • 1/2 mango
  • 90 grams olive oil

Mango Mayonnaise

  • 1/2 mango
  • 90 grams olive oil
  • 1/4 teaspoon chili flakes
  • 1/4 tablespoon Garlic Salt

Recipe's preparation

    Mango Faux Cream
  1. Puree Mango pulp 20 seconds SP 9.

    Insert Butterfly.  

    With Butterfly rotating on speed 4, and MC in place , gradually pour oil onto mixing bowl lid.  Add oil slowly.  Leave thermomix running until the oil has emulsified the mango, at least 3 minutes.

     

    This makes about 5 oz, and can be used to sandwich cake layers together, in a trifle, or on a small pavlova etc

  3. Puree Mango pulp 20 seconds SP 9.

    Add savoury seasonings

    Insert Butterfly.  

    With Butterfly rotating on speed 4, and MC in place, gradually pour oil onto mixing bowl lid.  Add oil slowly.  Leave thermomix running until the oil has emulsified the mango, at least 3 minutes.

     

    This makes about 5 oz, and can be used on chicken or fish or in a salad.  

     

    TIP

    If you are also making another dish that calls for chopped seasonings such as garlic and chill, chop those up first on SP7 3 seconds as usual, remove 95% from the bowl, but don't rinse it out, and then make the mayonnaise, and those flavours will be incorporated into the mayonnaise, without having to add extra seasoning.  Waste not, want not.
