"Praise Traditional" Mayonnaise (copy)

Ingredients

250 g

Mayonnaise

  • 10 grams white vinegar
  • 5 grams malt vinegar
  • 1 teaspoon salt
  • 2-3 teaspoon Sugar (optional)
  • 1 egg
  • 200 grams sunflower oil
  • dash Lemon juice (to taste)

Recipe's preparation

    Mayonnaise
  1. Weigh your oil into a glass jug (or something that you can pour from easily) on top of your thermomix bowl and lid.  Set aside.

     

    Place vinegars, salt and sugar in bowl (note: sugar is personal preference. I use 2-3 teaspoons, by sister uses 20g).  Cook for 3 minutes / 100 deg / sp 1 - WITH NO MC.  

     

    Turn machine up to sp 5 and add the egg (I crack it into my MC first).  Once added, put MC on and increase to sp 6. 

     

    Pour the pre-measured oil onto the tmx lid to slowly drizzle into bowl.  

    Once all oil is added leave machine on sp 6 for 1 minute.  

    Add your lemon juice through MC hole.  Mix sp 5 / 3 seconds.

     

    Bottle and enjoy!  (and let me know what you think!)

     

    NB:  The sugar is personal preference.  If you know you don't like sweet foods, maybe leave it out.  Including the sugar makes it taste more like the commercial Praise mayonnaise.

    I have tried 3 times and can't get this to emulsify. I just end up with liquid. I have made mayo before without issue. I have added the oil VERY slowly as I know this is important. Everything was at room temperature. I turned off the temp after adding the egg as per the comments recommendation. I have no idea why I can't get it to work. Such a waste of ingredients.

    Hella Bella: My apologies for the late reply. The 100 degrees is just to cook the vinegars. The residual heat will cook the egg, and then once added you turn the machine up to speed 6 for the emulsion. Hope that helps x

    This is great! Although I don't use malt vinegar, so I used balsamic vinegar, roughly 5g (scales not working properly at the time) and about 10g of rice vinegar, 1 tsp dijon, 2 tsp coconut sugar, no lemon juice, and rice bran oil and it tasted so good, way better than any other mayonnaises I have made before.     Making potato salad last night and didn't have enough mayonnaise. It took about 8 minutes to make this delicious recipe - less time than going to the local shops! My 2 teenagers, husband and I all agreed, this Mayo far surpassed any we have ever purchased. I used canola oil instead of sunflower oil, apple cider vinegar instead of malt vinegar and lime juice instead of lemon juice. Will make a double batch next time with all the requested ingredients, just to compare and always have some in the fridge. Thanks so much for the recipe. Will be a permanent staple in our house.

    The recipe will work fine without the sugar.  If your dad can have artifical sweeteners you could substitute the sugar for Xylitol or something similar.  Hope that helps x

    This is DELICIOUS!! I substituted the white vinegar for more malt vinegar (15ml malt vinegar in total) due to a salicylate intolerance & used 2tsp of sugar. This is the only low salicylate mayo recipe I have found that actually tastes nice & tastes like real mayo! Thank you!! tmrc_emoticons.)

    Tastes like Praise mayonnaise. It is sweet - I only used 2 teaspoons of sugar. I don't have a sweet tooth but my family preferred this to other mayonnaise recipes I'd tried. I've added this to my collection. Thank you.

    Love love love this recipe!! Already recommended to others!!! I had no sunflower oil so used grape seed oil, no lemons so used limes, and no malt vinegar so used apple cider vinegar! Still turned out awesome.

    Thanks for your comments. After cooking for 3 mins at the start I then

    increase my speed and start adding the rest immediately. 

    The recipe would most likely double okay. I would increase cooking time at the beginning (maybe 4 or 5 mins?) and once the oil was added I would leave running on sp6 for maybe 1.5-2mins. 

    I'm unsure how long it will keep in the fridge, however mine has certainly lasted 4-6 weeks without any problems.

    I added 2tsp of sugar and i think it completely ruined the taste of the mayo unfortunately. Would leave out if I was to try this again.Used light tasting olive oil and it produced a think creamy mayo.

    Hi Jayjayne, after heating the vinegars the residual heat will cook the egg. You don't need to set a time/temp for this step. After the initial cook of 3 minutes (step 2) I turn my speed dial up to 5, pour my egg through the mc hole (it's already cracked into my mc ready to go) and place the mc in place as soon as I have added the egg, then increase to sp 6. Then start pouring your oil right away, no need to wait. I hope this helps, good luck!

    Hi Rhyllagh - yes, I don't think that EVOO would work.  I have tried other oils in the past, however I don't find anything is as neutral as the sunflower oil.  The finished mayo should be slightly off-white in colour (as per the picture).  Good luck!
