Roast Tomato Salsa

Ingredients

  • 3-4 punnets cherry tomatos
  • 1/2 large red onion or 2 large shallots
  • 1/2 long red chilli, deseeded
  • pinch caster sugar (optional)
  • pinch salt (optional)

Recipe's preparation

  1. Preheat oven to 180°C. Line a large baking tray with non-stick baking paper. Place the tomatos, cut-side up, in a single layer, on the lined tray and bake for 30 minutes until soft and slightly browned.  Set aside for 30 minutes to cool.

     

    Chop chilli for 3-5 seconds speed 7.

     

    Scrape down the sides and add the onion.  Chop for 3 -5 seconds speed 7.

     

     

    Scrape down the side and add the tomatos (and sugar and salt if using).  Chop on speed 4 until desired consistency is reached (I chopped mine for approximately 40 seconds to reach a chunky consistency).
