Recipe's preparation
Place all ingredients into TM bowl and cook 40mins 100degrees Speed 1. With MC removed and TM basket on top.
Blend 30sec speed 6.
Check the consistency of the jam if it is still a little running cook for another 10min Varmoa Speed 1. Check again until you have reached the consistency that you like.
Place jam into a sterilised preserving jar.

Tip
Remember the riper the strawberries, the thinner the jam will be, to over come this add more currents (20-30g)

I made this as part of a Christmas basket for a diabetic. Added some Granny Smith apples (cored but not peeled) and used sultanas as all my currants were used up in other Christmas Goodies. Made three small-medium jars, just as well as or it would have been difficult to part with such a delicious jam. Thanks for the recipe. Now to try some gluten free scones next week when the over-eating frenzy has eased a little.
