Sugar-Free Berry Jam

Ingredients

Jam

  • 150 grams Frozen Blueberries
  • 150 grams frozen Rasberries
  • 40 grams Pure Maple Syrup
  • 10 grams vanilla extract/essence/paste
  • 25 grams chia seeds (any colour)

Recipe's preparation

    Jam
  1. Weigh berries into mixing bowl

    Turbo once or twice to break up the berries.

    Add maple syrup and vanilla.

    Cook 90C for 15 minutes on speed 2 with MC removed.

    Add chia seeds.

    Cook 90C for a further 5 minutes on speed 1 or until chia seeds start to thicken the mixture.

    Pour into a sterilized jar and seal.

    Place in refrigerator to cool and thicken further.

Can use only blueberries or raspberries.

    @womanoffaith, I tried strawberries and it just didn't turn out as well! Maybe a small percentage of strawberry might work. It just didn't have the same lovely texture - not sure why....

    Naydrum, hope you are enjoying the recipe community. tmrc_emoticons.)  This jam works beautifully with blueberries alone. It barely lasts a week in my fridge because everyone eats it!!! I would guess that it would keep in good condition in a sealed jar for a few weeks at least. Would love to hear how it goes if you put it to the test!! Enjoy!!
