Ingredients

Broccoli and Cauliflower Alfredo

  • 70 grams Parmesan cheese, cubed
  • 80 grams Tasty cheese, cubed
  • 1/2 head Broccoli, cut into florets
  • 1/2 head Cauliflower, cut into florets
  • 1 egg
  • 1 MC Pure Cream
  • salt and pepper to taste
  • 3/4 teaspoon Nutmeg
  • 125 grams cream cheese, cubed

Recipe's preparation

    Grated Cheeses
  1. Place cubed Parmesan into the bowl, speed 9 for 15 seconds, set aside.

  2. Place cubed Tasty Cheese into the bowl, speed 9 for 15 seconds, set aside.

  3. Broccoli and Cauliflower
  4. Half fill the Closed lid bowl with water, insert basket and fill with cauliflower.  Put lid on with out MC lid.  Fill the bottom steamer with Cauliflower and the top with Broccoli, then replace the lid.  Place the steamer on top of the TM.

  5. Steam on Veroma for 20 minutes.  Check the vegetables are cooked to your liking.

  6. Emtpy the cooked Broccoli and Cauliflower into a glass baking dish.

  7. Alfredo Sauce
  8. Add, egg, cream cheese, cream and parmesan cheese.  Speed 3 for 20 seconds or until well combined.

  9. Pour mixture over the steamed Cauliflower and Broccoli and stir through, ensuring all vegetales are coated in the sauce.

  10. Sprinkle with Tasty Cheese and Nutmeg.

  11. Place under grill for 10 minutes or until cheese is melted and beginning to brown.

Tip

This recipe has been adapted from the Low Carb made easy book by John Ratcliffe.  This side dish is all Protein , so serve with a potein main and you have a perfect low carb, high protin main meal.  

Suitable for Freezing

This dish is ideal for freezing in portions.  I always have it in my freezer as its a perfect side dish to accompany many meals.

    This was a good recipe. I probably won't use as much cream next time as the vegies were swimming in cheese. But still a great way to disguise vegies for the kids!
