Brocolli and feta salad

Ingredients

Broccoli and feta salad

  • 2 cloves garlic
  • 20 grams olive oil
  • 30 grams red wine vinegar
  • 1 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon honey, (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 250 grams broccoli florets
  • 1 red capsicum, seeds and core removed
  • 1 green apple, cut into quarters, core removed
  • 40 grams pine nuts
  • 1 large stalk Celery, cut in half - leaves removed
  • 1/2 red or spanish onion, cut in half (optional)
  • 1 carrot, peeled and cut into large peices
  • 100-150 grams danish feta, crumbled. You could also use persian feta or greek feta (if usting greek feta, mix in TM with the vegetables)

Recipe's preparation

  1. Add garlic to TM bowl. 2 seconds, speed 6.

     

    Add remaining dressing ingredients - olive oil, red wine vinegar, dijon mustard, honey, salt and pepper.  2 seconds, speed 5.

     

    Add broccoli, capsicum, apple, pine nuts, celery, onion and carrot.  2 seconds, speed 4.  Scrape down sides with spatula.  Check consistency and repeat  (2 second, speed 4) until you reach preferred texture - or until all ingredients have been chopped to roughly the same size.

     

    Serve with feta crumbled over the top.

Tip

You can also mix through left over rice to get more serves or even use as a main. I will often add an extra 5-10 grams of olive oil, red wine vinegar and another 1/2 teaspoon of dijon mustard when making the salad dressing.  Then at the end, add 100g cold rice and 30-40 grams sultanas (5 seconds, Counter-clockwise operationGentle stir setting) before serving as normal and sprinkling with crumbled feta.

    This recipe is so easy, yummy and healthy. I also add a quarter roughly chopped red cabbage and substitute the red wine vinegar and honey with raspberry balsamic - so good!

    This is lovely. I didn't have any capsicum or celery, so I just left them out.

    I also added some cooked chickpeas and roasted unsalted cashews to the finished product, which made it a substantial side dish!
