Cauliflower salad

Ingredients

4 portion(s)

  • 1/2 cauliflower, broken in florets
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon tumeric
  • 1/2 teaspoon paprika
  • 50 g pine nuts
  • 1/2 orange, juiced
  • 2 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 bunch mint leaves, fresh, shredded

Recipe's preparation

  1. Add cauliflower florets to TM bowl. Chop 4 seconds on speed 4.

    Add oil. Cook 10 minutes, 100 degrees, Counter-clockwise operationGentle stir setting.

    Add cumin, tumeric, paprika and pine nuts. Cook 5 minutes, 100 degrees, Counter-clockwise operation,Gentle stir setting.

    Place into salad bowl with mint leaves and allow to cool 10 minutes.

    Add orange juice, olive oil, salt and pepper. Stir and enjoy.

    Love this - Ate mouthful after mouthful when it was hot! So delicious - I didn't have any oranges or even orange juice, so whisked a teaspoon of home-made orange marmalade in the olive oil before adding when it had cooled. Scrumptious - will definitely make again.

  • Exceptional! Less is more

    Exceptional! Less is more when it comes to cutting the cauliflower in the TM bowl, otherwise it will turn out looking like luppy mash potato. I also added another handful of chopped mint before serving, as it gave a nice fresh colour. 5 Weight Watcher ProPoints per serving.

    Yummy, thanks!  Lovely flavour/colour/texture combinations.  I tweaked it by adding asparagus (spears cut into thirds) after chopping the cauliflower. I toasted the pinenuts in a pan on the stove and added some garlic to the dressing.  Definitely a keeper!
