Coconut & Chickpea Salad

Ingredients

Salad Ingredients

  • 1 Green Mango, Cut into cubes
  • 2 cans Chickpeas, drained
  • 20 grams desicated coconut, or 1/4 cup
  • 1 bunch coriander leaf, or 1/4 cup

Dressing Ingredients

  • 1 green chilli
  • 1 clove garlic
  • 1 centimetre fresh ginger
  • 65 grams coconut milk, or 1/4 cup
  • 10-15 grams fish sauce, or 3 teaspoons
  • 20-25 grams lime juice, or 2 tablespoons
  • 1 teaspoon sugar

Recipe's preparation

    Salad
  1. Place coriander into Thermomix for 2-3 seconds speed 7. 

  2. Remove coriander from Thermomix and place in a salad bowl with mango, chickpeas and coconut

  3. Salad Dressing
  4. Place garlic, ginger and chilli in Thermomix for 3 seconds  speed 7.

  5. Scrape down sides of Thermomix and add remaining salad dressing ingredients

  6. Blend 5 seconds speed 4-5

  7. Putting it all together
  8. Mix dressing with salad

  9. Cover & refrigerate for up to 3 hours
