Fattoush

  • 2 lebanese cucumbers, Roughly Chopped
  • 500 g cherry tomatoes
  • 1 red capsicum, Stem & Seeds Removed, Quartered
  • 4 shallots, Roughly Chopped
  • 1 Large Handful Mint, Leaves Only
  • 2 Large Handfuls Flat-Leaf Parsley, Leaves Only
  • 1 tbsp sumac
  • 150 g olive oil
  • 50 g lemon juice, To Taste
  • Crisp Lebanese Bread

Recipe's preparation


    • Bake or pan-fry Lebanese bread until crisp. Set aside.

    • Place cucumbers, capsicum, radish, shallots, parsley, and mint in TM bowl. Chop 1 sec, speed 5.

    • Add cherry tomatoes and chop a further 1 sec, speed 5. Repeat if necessary to achieve desired consistency. Be careful not to over-process!

    • Set aside salad. No need to rinse TM bowl.

    • Place olive oil, lemon juice, and sumac in TM bowl. Mix 5 sec, speed 7.

    • Break crisped bread into bite-sized pieces and add to salad. 

    • Top with dressing and toss gently to combine. 


    *To make gluten-free, omit bread or replace with GF crackes
