- 2 lebanese cucumbers, Roughly Chopped
- 500 g cherry tomatoes
- 1 red capsicum, Stem & Seeds Removed, Quartered
- 4 shallots, Roughly Chopped
- 1 Large Handful Mint, Leaves Only
- 2 Large Handfuls Flat-Leaf Parsley, Leaves Only
- 1 tbsp sumac
- 150 g olive oil
- 50 g lemon juice, To Taste
- Crisp Lebanese Bread

Recipe's preparation
- Bake or pan-fry Lebanese bread until crisp. Set aside.
- Place cucumbers, capsicum, radish, shallots, parsley, and mint in TM bowl. Chop 1 sec, speed 5.
- Add cherry tomatoes and chop a further 1 sec, speed 5. Repeat if necessary to achieve desired consistency. Be careful not to over-process!
- Set aside salad. No need to rinse TM bowl.
- Place olive oil, lemon juice, and sumac in TM bowl. Mix 5 sec, speed 7.
- Break crisped bread into bite-sized pieces and add to salad.
- Top with dressing and toss gently to combine.
*To make gluten-free, omit bread or replace with GF crackes
