Thai Green Curry Dumpling Soup
- 1 tbsp olive oil
- 1 onion cut into quarters
- 15 g fresh ginger cut into thin slices
- 3 garlic cloves
- 80 g Thai Green Curry Paste (homemade or store bought)
- 1200 g water
- 1 tbsp chicken stock paste
- 400 g 1 can coconut milk
- 1 tbsp light soy sauce
- 1 tsp brown sugar
- 2 Kaffir lime leaves fresh
- 100 g broccolini roughly chopped
- 1/2 red capsicum diced
- 100 g bok choy roughly chopped
- 20 Thai basil leaves, plus extra for garnish
- chopped shallots for garnish
- sesame oil to drizzle on serving
- red or green cayenne chillies sliced for garnish
- lime wedges
- 20 dumplings homemade or store bought, fresh or frozen

- 1. Add oil, onion, ginger & garlic into the mixing bowl and Chop 3 sec/speed 8. Scrape around the mixing bowl then Saute 3 min/120c/varoma temp/speed 1.
- 2. Add Thai green curry paste and Saute 2 min/120c/speed 1.
- 3. Place dumplings into the varoma dish & tray, cover with the lid and set aside.
- 4. Add water & chicken stock (or can use low sodium ready made chicken stock liquid), coconut milk, light soy sauce & brown sugar into the mixing bowl, put the lid on, put the varoma with dumplings in position ontop of the lid and Cook 15 min/120c/varoma temp/speed 1.
- 5. Remove the Varoma a d set aside.
- 6. Add kaffir lime leaves, red capsicum & broccolini into the mixing bowl and cook 5min/100c/speed 1.
- 7. Add bok choy & Thai basil leaves into the mixing bowl and stir in to combine using a spatula, until wilted.
- 8. Taste test and adjust the seasoning if needed and stir in with a spatula. Empty the soup into the thermoserver, add the steamed dumplings and stir gently to combine or you can put the dumplings strait into the serving bowls and pour the soup over the top.
- 9. Serve the soup topped with chopped shallots, Thai basil leaves, chopped red or green cayenne chillies sliced and a drizzle of sesame oil.

Tip
Note.. if using frozen dumplings you may need to steam/cook the dumplings a little longer in step 4. Check after 15 min cook and if needed extend cook time a few minutes longer.
* This recipe was written for TM7 but if you are using a TM6 or TM5 please place the simmering basket ontop of the lid in steps 2 & 5.
* I make my own Thai green curry paste which is at medium heat but if you use a store bought one please follow the instructions on the lable for qty usage.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
