For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Batter
  1. Add garlic & chop 3 seconds/speed 7
Scrape down the sides of the bowl with spatula
Add the rest of ingredients and mix 5 seconds/speed 5
Scrape down the sides of the bowl with spatula and mix again for 2 seconds speed 5 if required.
  2. Heat a small pan over medium-high heat using a thin layer of coconut oil, or grapeseed oil then add batter to make the roti (about the size of a small side plate) the smaller they are the easier they are to flip.

Cook on one side until the batter starts to "set" then flip and cook until golden on the other side. Repeat with remaining batter and serve immediately.

Tip

You could double the recipe if you like.

You could use any dairy free milk, using almond milk makes them thinner whereas using coconut milk makes them a bit thicker so it's personal preference.
