MOP'S 'ZINGY' CARROT SALAD

Ingredients

6 portion(s)

SALAD

  • 1 clove garlic
  • 3 centimetres Ginger nob
  • 4 medium size carrots, chopped into 3 pieces each
  • 5 sprigs parsley
  • 100 grams currants
  • 100 grams Shredded coconut
  • 20 grams olive oil
  • 1 teaspoon Cumin Powder
  • Salt & pepper to taste

Recipe's preparation

  1. Place garlic and ginger in TM bowl, chop 3 secs/speed 7, scrape down sides.

    Add carrots and parsley to TM bowl, and chop 3 secs/speed 5.

    Add currants, shredded coconut, olive oil, cumin, salt and pepper to TM bowl and mix secs /Counter-clockwise operation / speed 4.

    Allow flavours to develop before serving.

Tip

Before you start assembling salad, place currants in some warm water for 30 mins to plump up a little, then drain.

    Amazing recipe, so tasty, easy and fast to make! Its different too, which makes a nice change from other salads. Second time I made it, I used sultanas ... just a nice. Make it!!! Wink

    So with dinner on the table I realised I wanted a salad. Two minutes later this beauty was also on the table. I only had 20g of coconut but it was still bursting with flavour.

    Made this again tmrc_emoticons.) but this time I went half sesame oil and half olive oil. Still tasted great! With all the fresh parsley growing in the garden it's a great receipe to use them up....

    So yum and very versatile! The first time I made it, I didn't make any changes and it was delicious. I became adventurous the second time and I added spinach, yoghurt, an apple, fennel and pomegranate as I had them in the fridge...also fabulous. Thank you for such a great recipe!

    Thanks for your comment Sarah, yes cranberries would be a great inclusion or just on their own. The original recipe actually had sultanas instead of currants, but felt these took over a little bit.
