So with dinner on the table I realised I wanted a salad. Two minutes later this beauty was also on the table. I only had 20g of coconut but it was still bursting with flavour.
I’ll be saving this one as a favourite

So yum and very versatile! The first time I made it, I didn't make any changes and it was delicious. I became adventurous the second time and I added spinach, yoghurt, an apple, fennel and pomegranate as I had them in the fridge...also fabulous. Thank you for such a great recipe!

Yum, thank you for sharing your recipe. I added sweetened pomegranate seeds instead of currants (was intending to add dried cranberries but they were all gone).

Thanks 'Mop'.  This is my go to salad, it's always popular. I love letting it sit in the fridge overnight for the flavours to develop. Yum!

Thanks for your comment Sarah, yes cranberries would be a great inclusion or just on their own. The original recipe actually had sultanas instead of currants, but felt these took over a little bit.
