Ms Long-Leg's Zucchini Fritters

Ingredients

  • 500 g zucchini
  • 2 clove garlic
  • 1 tbsp mint
  • 4 eggs
  • 130 g SR flour
  • 60 g crumbled fetta
  • 2 tsp lemon juice

Recipe's preparation

  1. Top and tail zucchini and cut into large chunks

    Place in TMX bowl and chop 10 sec/speed 4 until coarse (note larger quantities may need longer)

    Transfer to TMX basket and allow to drain

    Chop garlic and mint 5 sec/speed 7

    Add eggs and flour and combine 10 sec/speed 3 until a thick batter has formed

    Crumble the fetta into the bowl and mix again 10sec/speed 6

    Squeeze excess water from zucchini, return to bowl with lemon juice and mix for 1min/interval speed

     

    Fry in a small amount of butter or oil of your choice turning when golden

This recipe is adapted from Annabel Langbein's Free Range in the City cookbook. The woman is amazing. The original recipe serves 1 as a light meal or 2 as a side dish. The quantities above serve 4 as a side dish as my children LOVE these.

    Have made these a few times now, beautiful, soft and not doughy, have them on a bed of rocket, a drizzle of balsalmic glaze, avocado and fetta.... really really good!  Excellent recipe.
