Palak Paneer (Spinach sauce with cheese)

  • 20 grams vegetable oil of choice
  • 2 teaspoons cummin seeds
  • 1 tablespoon garam masala (EDC)
  • 1-2 tablespoons Dried Chilli Flakes, Or to taste1
  • 1 teaspoon salt flakes
  • 1 Large Brown Onion, In quarters
  • 2 cloves garlic
  • 500 grams Spinach fresh, Trimmed and coarsly chopped
  • 160 grams single cream
  • 1 tablespoon lemon juice
  • 2 package paneer cheese, Available from the supermarket or you can make your own using the recipe on the community

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place onion, garlic, spices and chilli into TM bowl and process for    5 sec/ SP 5.

    Scrape down sides and add oil and cook 3 min/varoma /SP 1.

    Add spinach and lemon juice and cook 2 min/varoma/ SP1 until spinach is wilted.

    Put MC on and process 1 min/ SP9

    Add cream and salt and cook 3min/90C/ SP2

    While the sauce is cooking cut up Paneer and place into a thermoserver and when ready pour over Palak sauce and leave for a few minutes so the Paneer can heat up.

Tip

You could use kale or cavallo nero or a mix of all . Dont use the stalks. If you can't get Paneer you could try feta although this will be a completely different taste.

Serve with basmati rice.

    I have amended the recipe removing the fenugreek seeds which I think might be the bitter taste .

    I followed this recipe to the letter and I'm afraid it was awful - very bitter. I'm trying to salvage it by adding more cream and vegetable stock and more cooking time.
