Roasted Garlic and Parmesan Mash

  • 50 g Parmesan cheese, cut in pieces (2cm)
  • 1 whole garlic bulb
  • 1 tsp olive oil
  • 1.5 tsp fine sea salt
  • 1000 g floury potatoes, peeled, sliced (5mm)
  • 350 g Milk
  • 50 g unsalted butter

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place Parmesan in mixing bowl and grate 10 sec/speed 10. Transfer to a bowl and set aside.
  2. Slice the top off a whole garlic bulb to expose the tops of the cloves. Place on a piece of foil on a baking tray, drizzle with oil and sprinkle with 1 pinch salt. Wrap in the foil then roast for 35-40 minutes (150°C) until cloves come out easily when squeezed, then remove and set aside to cool. Meanwhile, cook potatoes.
  3. Insert butterfly whisk. Place potatoes, milk and 1½ tsp salt in mixing bowl then, without measuring cup, cook 25-30 min/95°C/speed 1 until cooked.
  4. Place squeezed out garlic flesh from cooled cloves in a bowl and mash with a fork then set aside.
  5. Add butter, reserved Parmesan and mashed garlic cloves to mixing bowl then mash 15 sec/speed 3.5. Season to taste.
