SAUERKRAUT WITH RASPBERRY + THYME

  • 1000 gram red cabbage
  • 1 small pieces Red Apple small, 1 Small Red Apple
  • 1 small pieces small beetroot, 1 small beetroot
  • 1 small piece red onion, 1 small Onion
  • 1 level tbsp salt
  • 1/2 scoops 1/2 Cup of Rasberries
  • 4 sprigs fresh thyme

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Chop cabbage in 2 halves to start with
  1. Chop Red Cabbage in 2 halves to start with.

    Put 500g of Red Cabbage in TM bowl (when placing in TM bowl I broke up the pieces so when they go into the bowl your able to fit 500g in, try to make sure all same size as when it’s chopped it all looks the same.

    Put half of the recommended salt into the TM bowl, chop for about 5 - 10 secs speed 4 (depending on how chopped you want your cabbage) you may need to use the spatula to stir it.

    Step 4 - Place chopped cabbage to one side into a mixing bowl & repeat with the other half of the cabbage and the rest of the sea salt.

    Place the Raspberries into a new mixing bowl. ( this bowl will have the Raspberries, Apple, Red Onion, Beetroot & Thyme) in it.

    Cut Apple in half put the Apple in TM bowl & chop for about 5 - 10 secs speed 2 or 3 ( you don’t want to Apple chunky but not stewed just little pieces. Then place chopped Apple in bowl with Raspberries.

    Cut Red Onion in half put the Red Onion in TM bowl & chop for about 5 - 10 secs speed 2 or 3 ( you don’t want to Onion chunky either then place chopped Onion in bowl with Apple and Raspberries.

    Cut the Beetroot in half put the Beetroot in TM bowl & chop for about 5 - 10 secs speed 2 or 3 (you don’t want to Beetroot chunky same size as Apple/Red Onion then place in bowl with Red Onion & Apple, Raspberries.

    Add the first batch of the cabbage (500g) to the TM bowl & stir for 8 mins Counter-clockwise operation speed 2. This will bring out heaps of moisture from the cabbage.

    Take leaves off to Thyme and place into Apple/Onion/Beetroot/Raspberries mixture, stir with spoon.

    Have your clean Jar ready (2litre glass jar), once the 1st batch of massaged cabbage is ready place Cabbage and some of the other mixture (Apple/Onion/Beetroot/Thyme), laying each time (Cabbage then Apple mixture) this will help with the fermentation process is taking place in Jar so get equal flavour.

    Add the second batch of the cabbage (500g) to the TM bowl & stir for 8 mins Counter-clockwise operation speed 2. ( I did stop it at 4 minutes and use a spatula to push all the mixture from top back down into the TM bowl.

    Once you have used both mixtures (layering each time). Place the lid on & store in a dark place for 1 week then refrigerate & it's ready to eat.
