  • 100g puy lentils
  • 900g water
  • 400 g sweet potato
  • 1 large onion
  • 2 cloves garlic
  • 15g olive oil
  • 20g Thai Curry Paste
  • 400g tin tomatoes
  • 700g water
  • 1 Tbsp Vege stock
  • 200g chorizo sausage

Recipe's preparation

  1.  

    Place lentils in basket and 900g water in TM bowl and cook 30 min/100 Degrees C/ Speed 3.

     

    At the same time place cubed sweet potato in Varoma and steam while lentils are cooking. The sweet potato will take about 20 minutes to steam.

     

    Remove and set aside lentils and sweet potato.

     

    Place onion and garlic into TM boowl and chop 3 sec/ speed 5. Scrape down sides af bowl add oil and Curry Paste and saute 5 mintes

     

     

    Add tinned tomatoes, water  and stock  and cook 10 minutes /100 Degrees/ Speed 1

     

    Meanwhile saute sliced chorizo on stove until turning golden and set aside 

     

     

    Return cooked lentil sweet potato and chorizo to the TM basket and cook another 5 minutes/ 100 Degrees /Speed1

    Serve with lemon juice, feta and parsley to taste

     

     

     

     

     

Tip

This is a meal in a bowl - great to have in the freezer as a standby.

The Curry Paste I have on hand in the fridge to add that extra flavour.

    Thanks - I missed out the word water - so I can understand how you thought the water was for steaming not for the sauce

    I return the sweet potato and lentils and chorizo to the basket as I don't want them to break up.

    Not too sure about this... Followed recipie, numbers don't seem to add up from ingredients list to method. Can't say I got 5 serves out of it, next to no sauce with only the can of tomatos. Think it may need some adapting

    A the end do I place the lentiseaweed potato and chorizo in the simmering basket while the sauce is in the Closed lid"Closed lid" ? or should it all be in the Closed lid"Closed lid"  on Counter-clockwise operation"Counter-clockwise operation" ?

    Deliciou, i added a small amount of Orange zest at the end to bring out the flavour of the sweet potato
