Ingredients
Zucchini and thyme soup
- 20 g olive oil
- 2 cloves garlic
- 1 onion, quartered
- 2 potatoes, peeled and chopped
- 750 g zucchini, chopped
- 750 g water
- 1 tsp Vegetable stock paste
- 6 fresh thyme, sprigs, leaves only
- 400 g cannellini bean, canned, rinsed and drained
- freshly ground pepper, to taste

I'm cooking this todayRecipe's preparation
- Place oil, onion and garlic in bowl and chop for 3 seconds on speed 5.
- Scrape down sides of bowl with spatula
- Cook for 5 minutes 120 deg speed 2
- Add zucchini, potatoes, stock paste, water and thyme leaves. Cook for 30 minutes 100 deg speed 2
- Use
"Blend" mode 30 seconds on speed 6 or until smooth - Add cannellini beans and pepper and stir with spatula
- Serve with chosen side
