  • 2 tablespoons olive oil
  • 1 onion
  • 3 bunches asparagus (approx. 480g), trimmed & roughly chopped
  • 600 g sweet potato, roughly chopped
  • 750 g liquid vegetable stock
  • 5 g fresh basil leaves

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Soup

    Place onion and olive oil into TM bowl and chop for 3 seconds on speed 7.

     

    Scrape down sides of bowl.

     

    Saute for 3 minutes at Varoma temperature on speed 2 

     

    Add asparagus, sweet potato and stock, cook for 15 minutes at 100°C on speed 2 until sweet potato is well cooked.

     

    Puree by bringing speed up slowly from speed 1 to speed 9 for approximately 30 seconds. The liquid is extremely hot and may spit as the speed increases, so use caution. 

     

    Garnish with cracked black pepper and fresh basil leaves. Serve with slice of bread.

    OMG this is yum. I didn't have liquid veggie stock so used Vegeta Gourmet Stock and water. So easy and quick.

    Love this soup. Needed to use up the asparagus but children are not mad on it let alone husband. The addition of the sweet potato turned it into a lovely robust soup, which was still asparagus, but subtle. Amazing! Thank you for sharing.
