Roasted Pumpkin Soup
- 1200 g pumpkin, peeled and roughly cut up
- 2 carrots or potatoes, roughly cut up ( including skins )
- 1 large onion, cut into half moons
- 4 cloves garlic, peeled
- oil of choice, to coat vegetables
- 100 g bacon, torn into 5 cm pieces
- 20 g olive oil
- 1 heaped teaspoon curry powder
- 450 g water, increase if too thick
- 2 tablespoons stock paste
- 100 g cream, of choice, or mik (optional )
- Chopped chives

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation
- Preheat oven to 200-210 degrees and line 2 large trays with foil.
- Place pumpkin, carrot/potatoes, onion and garlic into a large bowl. Toss to coat with oil of choice.
- Roast for 20-30 minutes, turning over at 10-15 minutes.
- Add bacon to TM bowl.
- Chop 2 sec/speed 4.5.
- Scrape down sides of bowl.
- Add olive oil and curry powder.
- Saute 3 mins/Varoma/speed 1.
- Scrape down the sides and base of bowl.
- Add roasted vegetables ( approx 1000g after roasting ) to TM bowl.
- Add water and stock paste.
- Cook 25 minutes/100/speed 1.
- SLOWLY turn the speed dial to speed 4 until balanced and no longer vibrating. Once settled, slowly turn speed dial up to speed 9 for 1 minute.
- Add cream / milk.
- Stir 10 sec/speed 4.
- Pour into Thermoserver and serve soup sprinkled with chopped chives.
- Enjoy with crusty bread !

Tip
If you like a little bit of bite, use chilli oil to roast the vegetables.
A mixture of vegetable and chicken stocks gives a nice flavour.
