Roasted Tomato & Red Pepper (Capsicum) Soup

Roasted Tomato & Red Pepper Soup

  • olive oil for drizzling
  • 1 large red pepper (Capsicum)
  • 6 Roma tomatoes
  • 3 shallots
  • 1 teaspoon Dried or fresh thyme
  • handful of fresh basil leaves
  • 1 teaspoon smoked paprika
  • pinch of chilli flakes (optional)
  • 200-250 g Boiling hot water
  • salt and pepper to taste

Recipe's preparation

    Roasted Tomato & Red Pepper Soup
  1. 1.  Preheat the oven to 200C or 180C fanforced.


    2. Chop up the red pepper, tomatoes, and peel the shallots and arrange them on a baking tray along with the thyme and fresh basil.  Drizzle with a little olive oil and sprinkle salt over the top and roast in the oven for 30-45 minutes until soft.


    3. Once they have finished roasting, place everything into the Thermomix bowl along with the water, paprika, and chilli flakes (if you like it spicy) check the seasoning and blitzt for 20-30 sec/speed 9, gradually increasing the speed and holding the measuring cup in place.
