Sweet Potato and Curry with Lime Soup

Soup

  • 2 level teaspoons peanut oil
  • 1 large red onion
  • 2 cups of diced sweet potato
  • 2 1/2 cups of Rooibos (Red Bush) tea/water
  • 2 level teaspoons curry powder
  • 2 level teaspoons ground ginger
  • 1 level teaspoon coriander powder
  • 1/2 level teaspoon herbal salt
  • 3 Kaffir lime leaves
  • Juice of 1 lime
  • zest of 1 lime to decorate
  • 4ml Nigella seeds to decorate
  • 2 cloves of garlic

Recipe's preparation

    Method:
  1. Place garlic and red onion in TM bowl. Chop for 3 seconds, speed 7. Saute 2 minutes, 100 degrees, speed 1. Add spices and salt and stir 15 seconds, speed 2. Add diced sweet potato and stir 20 seconds, counter-clockwise operation, speed 3.


    Add lime juice, rooibos tea/water and kaffir lime leaves. Cook 15 minutes, 100 degrees, counter-clockwise operation, speed 1.


    Remove kaffir lime leaves and pulverise soup 30 seconds, gradually increasing from speed 1 to speed 8. Return kaffir lime leaves to pot and stir 10 seconds, speed 2.


    Serve soup in individual bowls, scatter with Nigella seeds and lime zest.
